Armadillo Salt Recipes

Armadillo Popcorn

Ingredients
  • 2 tbsp vegetable oil/coconut oil
  • 1/2 cup popcorn kernels
  • 2 tbsp butter, melted
  • 1 lime, juiced and zested
  • 2 tbsp Armadillo Salt

Instructions
1.
Combine melted butter, lime juice, and lime zest into a small bowl and set aside. Taste a little because it's delicious!
2.
Heat the oil in a large thick-bottomed saucepan on medium-high heat.
3.
Put 3-4 kernels in the warmed oil and wait for them to start popping. These guys are our frontline offensive.

Remove from heat, add the rest of the kernels, cover, and allow 30 seconds for them to warm together in oil.
5.
Return the pan to the burner, and prepare for the fireworks!
6.
Once the kernels start to pop, gently shake the covered pan back and forth over the burner (it helps to hold the lid on with a dish towel while you're shakin' if you get too excited).
7.
Once the popping slows to 2-3 seconds between pops, remove from heat and dump immediately into a large bowl.
8.
Give the lime butter a quick stir to make sure the zest and juice are blended, and pour evenly over the popcorn while tossing.
9.
Sprinkle buttered popcorn liberally with Armadillo Salt and tussle again to make sure everyone's making it to the party.
10.
Try to share, even though you won't want to!

Armadillo Fajitas

Ingredients
  • 1 lb Chicken Breast (pounded thin), Chicken Thighs, or Beef Skirt Steak
  • 1 White onion, sliced
  • 1 Bell Pepper, sliced
  • 1 Lime, juiced
  • 3 tbsp Armadillo Salt

Instructions
1.
Rub your meat of choice liberally with Armadillo Salt, place it on a plate, and allow it to rest at room temperature for at least 30 minutes.
2.
Heat oil in a large cast iron or stainless steel pan on medium heat.
3.
Add the seasoned meat and cook for 6-7 minutes on each side.
4.
Once the meat is finished, remove it from the pan and set aside.
5.
Add a little oil to the same pan, and throw the onions and peppers in, stirring occasionally and scraping up all the tasty bits from the bottom of the pan. Feel free to splash a little water or chicken stock in to help loosen things up if needed.
6.
Slice the finished meat and toss back in with the peppers and onions once they've softened a bit.
7.
Remove from heat and stir in the lime juice.
8.
Serve on a tortilla, over rice, or just eat it all with your hands straight out of the pan if that's your thing.
9.
Add some guacamole, sour cream, salsa or pico de gallo, and an ice-cold Mexican beer if you want to take things to the next level!

Armadillo Baked Salmon

Ingredients
  • 1 lb salmon filet
  • 3 cloves of garlic, diced
  • 1 lemon or lime
  • 1 tbsp olive oil, divided
  • 1 sheet of foil large enough to wrap around the filet, with a little room on all sides
  • 2 tbsp Armadillo Salt

Instructions
1.
Rub the salmon filet liberally with Armadillo Salt and let it rest at room temperature for at least 15 minutes to allow the magic to happen. Set the oven to 375.
2.
Lightly coat the foil with olive oil, place the salmon in the middle of the foil sheet, and drizzle the remaining oil over the filet.
3.
Thinly slice half of the lemon or lime, and shingle slices over top. Squeeze the juice of the remaining half over the salmon.
4.
Scatter diced garlic on top. This guy's coming together!
5.
Fold the foil up over and crimp all sides until it is completely enclosed. This will ensure there is no chance of the fish running away.
6.
Bake the salmon for 15-20 minutes, depending on thickness, checking every few minutes after the 15-minute mark for doneness.
7.
Remove from oven, open the foil (carefully, it's a steamy mother) to allow the top of the filet to be completely exposed.
8.
Set the oven to broil and return the fish to the oven for 2-3 minutes until you're getting the desired amount of crispy bits.
9.
Remove from the oven and allow to rest for 4-5 minutes before attempting not to eat the entire thing yourself in one sitting.
